Who doesn’t love the smell of apple pie baking?! Believe it or not this kale dish smells like that when it’s warming. Yup. Don’t believe me? Try it for you yourself and see.

This recipe is so easy and tastes amazing. Mix up all the ingredients in the morning and let it marinate until just before you are ready to serve it. It takes about 10 minutes to prep including chopping the kale and about 5 minutes to warm just before serving. That’s it. Let it sit overnight for the kale to break down and the flavors to go through.

I actually used an apple pie flavored shrub from my favorite shrub people who introduced shrubs to me; Route18, to marinate my kale in. What is a shrub you ask? They are also known as drinking vinegars and were popular in Colonial times to preserve fruit harvests. The fruit was macerated (become softened by soaking in a liquid) in sugar then added to vinegar to form a syrup which was used as an addition to water, spirits or tea. Once refrigeration came along this method fell by the wayside. It’s seen a resurgence since 2011 and I highly recommend them.

Anyways this recipe will get you similar results if you don’t happen to have apple pie shrub and it will be big hit!

Apple Pie Spiced Kale

3 large bunches of kale, de-stemed

1 large granny smith apple, finely chopped

1 cup raw apple cider vinegar

3 teaspoons ground cinnamon

3/4 teaspoon ground nutmeg

1/8 teaspoon ground ginger

3/4 teaspoon cardamom

1/2 tablespoon raw honey

Whisk to mix the apple cider vinegar and spices together in a measuring cup. Then stir in the apples. Pour the entire mixture over the kale in a large glass bowl and massage the liquid into the kale. Cover and marinate in the fridge overnight.

Remove from the fridge about 30 minutes before warming and serving. To warm add kale mixture to pan on medium low along with the honey and warm through. Serve immediately.
