FAST, EASY, GRAB N GO EGG BACON MUFFINS

I wasn't planning to post a recipe today but so many of you that saw the picture of these on social media have asked for it; so here it is. This is a great make ahead grab n go option for breakfast for any meal really. They only take about 10 minutes to whip up, less if you have cooked bacon on hand and 20 minutes to bake. Let's just dive right into the recipe and next week we'll go into more detail about why you want to use pastured eggs and pastured bacon! 

Ingredients


4 pastured eggs
¼ cup organic of one of the following - grass-fed crème fraiche, sour cream, cow, water buffalo, sheep or goat yogurt (full fat)
2 tablespoons softened organic, grass-fed butter, cow or goat
4 tablespoons organic raw coconut flour
¼ teaspoon high quality sea salt or pink Himalayan
¼ teaspoon organic Cajun spice or chipolte seasoning; mild or spicy
¼ teaspoon organic baking powder
4 strips cooked pasture raised bacon, chopped up
½ cup organic grass-fed cheese; grated (I personally use goat or sheep cheese but grass-fed cow or water buffalo works well too)
½ cup of organic greens; chard, kale, spinach, sorrel, collards or whatever is in season and you prefer


Preheat oven to 375°. Grease muffin pan (4 cup large muffin pan or 6 cup small muffin pan) with softened butter. Whisk the eggs and crème fraiche, sour cream, or cow, water buffalo, sheep or goat yogurt together in a medium sized glass or stainless steel bowl.

Add coconut flour, salt, Cajun or chipotle spice, baking powder and mix well. Add in bacon plus the fat from cooking, cheese and greens and fold in mixing well. Let batter sit for about 5 minutes.

Stir to make sure well blended still then pour the batter evenly into the cups. Be sure to only fill them ¾ full though as the muffins will rise while baking. Bake for 15-20 minutes, or until the top of the muffins are golden brown and a toothpick comes out clean.

Let muffins cool a bit on a cooking rack before serving. To serve, slather with softened grass-fed butter on top and a salad or several handfuls of microgreens or sprouts. Eaten like this these should keep you going for several hours before you are hungry again.
